About The Chef
May I introduce myself, my name is Michael Collom - my culinary background is mainly working in Michelin starred country house hotels. My overseas experience included working in Jamaica & The Cayman Islands, as well as the famous 3 star Michelin ‘Hotel le Cote Saint Jacques’ in France.
I have run several successful cookery classes & written a cookery book, the proceeds of which were given to Little Bridge House Children’s Hospice in Devon.
Much of my culinary influence came when I was working under the Austrian chef Karl Loderer at Gravetye Manor, Sussex. Through his teaching and guidance I became head chef at the Priory Hotel in Bath where I remained for 17 years.
